Mutton And Rice Stuffed Cabbage Rolls

Ingredients

  • 1 cup lean mutton, parboiled and chopped
  • 1 cup boiled rice
  • Salt and pepper to taste
  • Butter, for seasoning and serving
  • Cabbage leaves, white inner leaves
  • Cheese-cloth
  • Water for boiling

Method

  1. 1 Parboil and chop lean mutton. Mix with an equal quantity of boiled rice and season with salt, pepper, and butter.
  2. 2 Place a large spoonful of the meat and rice mixture onto each cabbage leaf. Fold and tie securely.
  3. 3 Tie all prepared leaves in cheese-cloth and boil slowly for 30 minutes in the water used to boil the mutton.
  4. 4 Remove from cloth, take off strings, and serve with melted butter.
