Mutton And Macaroni Stew
Ingredients
- 3 tablespoons butter
- 1 tablespoon green pepper, chopped fine
- 1 tablespoon onion, chopped fine
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1 cup brown stock
- 1/2 cup tomato purée
- 1 cup cold roast mutton, cut in strips or cubes
- 1/2 cup cooked macaroni, blanched and drained
- 2-3 mushrooms or 1 tablespoon mushroom catsup (optional)
Method
- 1 Melt butter in a blazer and sauté chopped green pepper and onion.
- 2 Stir in flour and salt; cook until frothy.
- 3 Gradually add brown stock and tomato purée; boil for 2-3 minutes.
- 4 Set over hot water and stir in mutton and macaroni.
- 5 Add mushrooms or mushroom catsup if desired.
