Method

  1. 1 Soak white haricot beans overnight or stew them in weak stock until tender.
  2. 2 Prepare a tomato sauce and flavor it strongly with made mustard, stirring well to incorporate.
  3. 3 Drain the tender beans, keeping them hot, and reduce the cooking liquor to half its quantity.
  4. 4 Return the beans to the reduced liquor, add the tomato sauce, and heat for a couple of minutes.
  5. 5 Serve with three-cornered pieces of toast.
