Mustard Tarragon Salmon With Fennel Sauce

  • salmon slices, about ¾ inch thick
  • hot fish broth
  • wine
  • butter
  • tarragon vinegar
  • pepper
  • mustard
  • fennel
  • spices to taste
  • egg yolk

Method

  1. 1 Place salmon slices in a saucepan with hot fish broth and a small amount of wine. Simmer for 15 minutes until cooked.
