Mustard Tarragon Salmon With Fennel Sauce
Ingredients
- salmon slices, about ¾ inch thick
- hot fish broth
- wine
- butter
- tarragon vinegar
- pepper
- mustard
- fennel
- spices to taste
- egg yolk
Method
- 1 Place salmon slices in a saucepan with hot fish broth and a small amount of wine. Simmer for 15 minutes until cooked.
- 2 Remove salmon, wipe dry, and place on a hot platter.
- 3 In a separate pan, melt butter and flavor with tarragon vinegar, pepper, mustard, fennel, and other spices.
- 4 Stir the sauce over heat, then move to the side. Thicken with egg yolk and serve over the salmon.
