Mustard Mayo Potato Salad

Ingredients

  • 1 medium potato
  • 1/2 cup chopped celery
  • 1 cup minced onion
  • 1 teaspoon frozen peas
  • 1/2 cup prepared mustard
  • 1/2 cup low-fat mayonnaise
  • 1/2 cup non-fat plain yogurt
  • Fresh cracked black pepper, to taste
  • Lettuce and tomato for garnish (optional)

Method

  1. 1 Wash potatoes, leave skin on, and cut into bite-size chunks.
  2. 2 Place potatoes in a pan, cover with water, bring to a boil, then simmer uncovered until tender, about 20 minutes.
  3. 3 Drain potatoes in a colander and sprinkle lightly with cold water.
  4. 4 In a large mixing bowl, combine celery, onion, peas, mustard, mayonnaise, yogurt, and pepper.
  5. 5 Drain potatoes well and add them to the bowl. Mix well and refrigerate until ready to serve.
  6. 6 Garnish with fresh lettuce and sliced tomatoes before serving.
