Mustard Mayo Potato Salad
Ingredients
- 1 medium potato
- 1/2 cup chopped celery
- 1 cup minced onion
- 1 teaspoon frozen peas
- 1/2 cup prepared mustard
- 1/2 cup low-fat mayonnaise
- 1/2 cup non-fat plain yogurt
- Fresh cracked black pepper, to taste
- Lettuce and tomato for garnish (optional)
Method
- 1 Wash potatoes, leave skin on, and cut into bite-size chunks.
- 2 Place potatoes in a pan, cover with water, bring to a boil, then simmer uncovered until tender, about 20 minutes.
- 3 Drain potatoes in a colander and sprinkle lightly with cold water.
- 4 In a large mixing bowl, combine celery, onion, peas, mustard, mayonnaise, yogurt, and pepper.
- 5 Drain potatoes well and add them to the bowl. Mix well and refrigerate until ready to serve.
- 6 Garnish with fresh lettuce and sliced tomatoes before serving.
