Mustard Glazed Meatloaf
Ingredients
- 1 tsp vegetable oil
- 1 small Spanish onion, peeled and chopped
- 1/2 green bell pepper, cored and diced
- 2 cloves garlic, peeled and diced
- 1 tsp dried thyme
- 2 tbsp tomato paste
- 1/2 cup water
- 1 tbsp yellow mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb ground beef or turkey
- 1 large egg
- 6 tbsp rolled oats, divided
- 1 tsp tomato paste (for glaze)
- 1 tsp yellow mustard (for glaze)
Method
- 1 Preheat oven to 325°F. Heat oil in a skillet over medium heat. Add onion, bell pepper, garlic, and thyme; cook 10 minutes until golden.
- 2 Lower heat, add water and 2 tbsp tomato paste. Cook 10 minutes until liquid is absorbed. Stir in 1 tbsp mustard, salt, and pepper. Cool.
- 3 In a bowl, gently mix beef, egg, and 4 tbsp oats. Add cooled onion mixture and mix until incorporated. Do not overmix.
- 4 Form mixture into an 8x4 inch loaf on a greased baking sheet. Mix 1 tsp tomato paste and 1 tsp mustard for glaze; rub over top.
- 5 Sprinkle with remaining 2 tbsp oats. Bake 1 hour until deep brown and cooked through. Serve immediately or refrigerate.
