Mushrooms Stewed In Mutton Gravy
Ingredients
- fresh mushrooms
- white wine
- 1 sprig fresh thyme
- 1 whole onion
- 4-5 whole peppercorns
- 2-3 cloves
- 1 slice orange
- salt
- butter
- mutton gravy
- juice of 1 lemon
- nutmeg
Method
- 1 Trim mushroom stalks and soak in white wine for 30 minutes. Drain and place between two dishes over low heat to stew without added liquid.
- 2 Once softened, discard the released liquid. Transfer mushrooms to a clean dish with thyme, onion, peppercorns, cloves, orange slice, salt, butter, and mutton gravy.
- 3 Cover and stew gently until tender. Remove from heat, skim off fat, and discard the thyme, spices, and orange.
- 4 Stir in lemon juice and grated nutmeg. Toss gently to combine, then serve hot.
