Mushrooms Stewed In Mutton Gravy

Ingredients

  • fresh mushrooms
  • white wine
  • 1 sprig fresh thyme
  • 1 whole onion
  • 4-5 whole peppercorns
  • 2-3 cloves
  • 1 slice orange
  • salt
  • butter
  • mutton gravy
  • juice of 1 lemon
  • nutmeg

Method

  1. 1 Trim mushroom stalks and soak in white wine for 30 minutes. Drain and place between two dishes over low heat to stew without added liquid.
  2. 2 Once softened, discard the released liquid. Transfer mushrooms to a clean dish with thyme, onion, peppercorns, cloves, orange slice, salt, butter, and mutton gravy.
  3. 3 Cover and stew gently until tender. Remove from heat, skim off fat, and discard the thyme, spices, and orange.
  4. 4 Stir in lemon juice and grated nutmeg. Toss gently to combine, then serve hot.
