Mushroom Pot Pie with Gravy
Ingredients
- 1 lb mushrooms
- 1/2 lb whole wheat flour
- 4 oz butter or frying oil
- Salt and pepper to taste
- 3 oz butter (for pastry)
- Cold water
- 4 shallots, finely chopped
- 1 tsp cornstarch
- 3 bay leaves
- 1/2 oz butter (for gravy)
- 3/4 pint water
Method
- 1 Preheat oven to 350°F.
- 2 Pick, wash, dry, and chop mushrooms; remove stalks and set aside.
- 3 Mix flour, 3 oz butter, and cold water to form a dough; roll out and line a pie plate.
- 4 Heap mushrooms into the crust, season with salt and pepper, and dot with remaining butter.
- 5 Cut reserved dough into strips and arrange in a diamond pattern on top.
- 6 Bake for 45 minutes until golden.
- 7 For gravy, fry mushroom stalks and shallots in 1/2 oz butter.
- 8 Add water, bay leaves, and seasoning; simmer for 30 minutes.
- 9 Strain liquid, return to pan, and thicken with cornstarch slurry.
