Mushroom And Potato Cutlets
Ingredients
- 1/4 lb mushrooms
- 3/4 cup mashed potatoes
- 3/4 cup breadcrumbs
- 1 small onion
- 2 eggs
- 2 oz butter
- milk
- 1 tsp finely chopped parsley
- 1/2 tsp herbs
- salt and pepper
Method
- 1 Peel and chop mushrooms and onion. Fry in 1 oz butter until soft.
- 2 Mix fried vegetables with mashed potatoes, breadcrumbs, 1 beaten egg, parsley, herbs, salt, and pepper. Add milk if needed to form a paste.
- 3 Shape mixture into cutlets. Dip in remaining beaten egg and fry in remaining butter until golden.
- 4 Serve with tomato sauce.
