Mushroom And Potato Cutlets

Ingredients

  • 1/4 lb mushrooms
  • 3/4 cup mashed potatoes
  • 3/4 cup breadcrumbs
  • 1 small onion
  • 2 eggs
  • 2 oz butter
  • milk
  • 1 tsp finely chopped parsley
  • 1/2 tsp herbs
  • salt and pepper

Method

  1. 1 Peel and chop mushrooms and onion. Fry in 1 oz butter until soft.
  2. 2 Mix fried vegetables with mashed potatoes, breadcrumbs, 1 beaten egg, parsley, herbs, salt, and pepper. Add milk if needed to form a paste.
  3. 3 Shape mixture into cutlets. Dip in remaining beaten egg and fry in remaining butter until golden.
  4. 4 Serve with tomato sauce.
