Mushroom And Parsley Sauce
Ingredients
- 2 tbsp olive oil
- 1 handful mushrooms, chopped
- 1 bunch parsley, chopped
- 2 scallions, chopped
- 1 bay leaf
- 2 cloves
- 1 clove garlic, minced
- 1 tbsp all-purpose flour
- 1/2 cup white wine
- 1 cup good stock (cullis)
Method
- 1 Heat olive oil in a stewpan over medium heat. Add mushrooms, parsley, scallions, bay leaf, cloves, and garlic. Sauté, turning occasionally, until fragrant.
- 2 Sprinkle flour over the mixture and stir to coat. Cook for 1 minute.
- 3 Pour in white wine and stock. Bring to a boil, then simmer for 30 minutes.
- 4 Skim off excess fat. Let cool slightly, then reheat and serve over white meat.
