Mushroom And Parsley Sauce

Ingredients

  • 2 tbsp olive oil
  • 1 handful mushrooms, chopped
  • 1 bunch parsley, chopped
  • 2 scallions, chopped
  • 1 bay leaf
  • 2 cloves
  • 1 clove garlic, minced
  • 1 tbsp all-purpose flour
  • 1/2 cup white wine
  • 1 cup good stock (cullis)

Method

  1. 1 Heat olive oil in a stewpan over medium heat. Add mushrooms, parsley, scallions, bay leaf, cloves, and garlic. Sauté, turning occasionally, until fragrant.
  2. 2 Sprinkle flour over the mixture and stir to coat. Cook for 1 minute.
  3. 3 Pour in white wine and stock. Bring to a boil, then simmer for 30 minutes.
  4. 4 Skim off excess fat. Let cool slightly, then reheat and serve over white meat.
