Molasses Spiced Gingerbread With Currants

Ingredients

  • 1 cup Porto Rico molasses
  • 1 cup boiling water
  • 1 egg-sized pat of butter
  • ½ tsp ground cloves
  • 1 tsp cinnamon
  • 1 egg
  • 1 tsp ginger
  • ½ tsp baking soda
  • ½ lb flour
  • ¼ cup brown sugar
  • Currants and raisins, stoned and chopped (optional)

Method

  1. 1 Melt the butter and stir it into the molasses.
  2. 2 Add the spices and boiling water to the molasses mixture.
  3. 3 Sift the baking soda with the flour.
  4. 4 Add the flour mixture to the wet ingredients at the last moment.
  5. 5 Fold in currants and raisins if desired.
  6. 6 Bake in a loaf pan or small molds.
