Molasses Spiced Gingerbread With Currants
Ingredients
- 1 cup Porto Rico molasses
- 1 cup boiling water
- 1 egg-sized pat of butter
- ½ tsp ground cloves
- 1 tsp cinnamon
- 1 egg
- 1 tsp ginger
- ½ tsp baking soda
- ½ lb flour
- ¼ cup brown sugar
- Currants and raisins, stoned and chopped (optional)
Method
- 1 Melt the butter and stir it into the molasses.
- 2 Add the spices and boiling water to the molasses mixture.
- 3 Sift the baking soda with the flour.
- 4 Add the flour mixture to the wet ingredients at the last moment.
- 5 Fold in currants and raisins if desired.
- 6 Bake in a loaf pan or small molds.
