Molasses Raisin Cake With Jelly Glaze
Ingredients
- Raisins, halved
- 4 tablespoons flour
- 1 tablespoon water
- 1 teaspoon baking soda
- Thick sour milk
- Molasses
- Butter, melted
- Spices
- 4 tablespoons sugar
- 3 tablespoons water
- 2 teaspoons currant or grape jelly
Method
- 1 Cut raisins in half and toss with 4 tablespoons of flour.
- 2 Dissolve soda in 1 tablespoon water, add to sour milk and beat for one minute.
- 3 Add molasses and beat again, then stir in melted butter.
- 4 Mix in flour and spices, beat well, then fold in raisins.
- 5 Pour into a greased bread pan and bake in a moderate oven (350°F) for one hour.
- 6 Turn cake out of pan and baste with syrup made by boiling sugar, water, and jelly.
