Molasses Raisin Cake With Jelly Glaze

Ingredients

  • Raisins, halved
  • 4 tablespoons flour
  • 1 tablespoon water
  • 1 teaspoon baking soda
  • Thick sour milk
  • Molasses
  • Butter, melted
  • Spices
  • 4 tablespoons sugar
  • 3 tablespoons water
  • 2 teaspoons currant or grape jelly

Method

  1. 1 Cut raisins in half and toss with 4 tablespoons of flour.
  2. 2 Dissolve soda in 1 tablespoon water, add to sour milk and beat for one minute.
  3. 3 Add molasses and beat again, then stir in melted butter.
  4. 4 Mix in flour and spices, beat well, then fold in raisins.
  5. 5 Pour into a greased bread pan and bake in a moderate oven (350°F) for one hour.
  6. 6 Turn cake out of pan and baste with syrup made by boiling sugar, water, and jelly.
