Molasses Pumpkin And Apple Jam
Ingredients
- 1 medium pumpkin, peeled, seeded, and cut into 2-3 inch pieces
- Molasses, enough to barely cover the pumpkin
- 1 ounce cloves
- 2 teaspoons ginger (or to taste)
- 6 sour apples, cored but not peeled (optional)
Method
- 1 Peel and seed the pumpkin, then cut into 2-3 inch pieces. Lay them on a dish to dry overnight.
- 2 Place the pumpkin pieces in a preserving pan. Add the cloves and ginger.
- 3 Add molasses until it barely covers the pumpkin pieces. If using, add cored sour apples.
- 4 Boil the mixture until the pumpkin is quite soft and the jam is thickened.
