Molasses Pumpkin And Apple Jam

Ingredients

  • 1 medium pumpkin, peeled, seeded, and cut into 2-3 inch pieces
  • Molasses, enough to barely cover the pumpkin
  • 1 ounce cloves
  • 2 teaspoons ginger (or to taste)
  • 6 sour apples, cored but not peeled (optional)

Method

  1. 1 Peel and seed the pumpkin, then cut into 2-3 inch pieces. Lay them on a dish to dry overnight.
  2. 2 Place the pumpkin pieces in a preserving pan. Add the cloves and ginger.
  3. 3 Add molasses until it barely covers the pumpkin pieces. If using, add cored sour apples.
  4. 4 Boil the mixture until the pumpkin is quite soft and the jam is thickened.
