Molasses Oatmeal Muffins

  • 1 1/3 cups flour
  • 2 tablespoons molasses
  • 1/2 teaspoon salt
  • 2 tablespoons fat
  • 3 teaspoons baking powder
  • 1 egg, beaten
  • 1/2 cup milk
  • 1 cup cooked oatmeal

Method

  1. 1 Sift the dry ingredients (flour, molasses, salt, fat, baking powder) together in a bowl.
  2. 2 Add the beaten egg and milk to the dry mixture and stir until combined.
  3. 3 Fold in the cooked oatmeal and beat the batter well.
  4. 4 Pour into greased muffin tins and bake for 20 minutes.
