Molasses Lemon Pie

Ingredients

  • 1 cup molasses
  • 2 tsp flour
  • Juice of 1 large lemon
  • Rind and pulp of 1 large lemon, chopped fine
  • Pie crust (for bottom and top)

Method

  1. 1 Mix molasses and flour in a bowl until smooth.
  2. 2 Stir in lemon juice and chopped lemon rind and pulp.
  3. 3 Pour filling into a pie crust lined pan.
  4. 4 Cover with a top crust and seal edges.
  5. 5 Bake at 350°F until crust is golden and filling is set.
