Molasses Lemon Pie
Ingredients
- 1 cup molasses
- 2 tsp flour
- Juice of 1 large lemon
- Rind and pulp of 1 large lemon, chopped fine
- Pie crust (for bottom and top)
Method
- 1 Mix molasses and flour in a bowl until smooth.
- 2 Stir in lemon juice and chopped lemon rind and pulp.
- 3 Pour filling into a pie crust lined pan.
- 4 Cover with a top crust and seal edges.
- 5 Bake at 350°F until crust is golden and filling is set.
