Molasses Graham Bread

Ingredients

  • 1 cup milk
  • 1 cup water
  • 1 ½ cups white flour
  • 1 tsp salt
  • 1 yeast cake
  • ½ cup Porto Rico molasses
  • Graham flour, as needed

Method

  1. 1 Scald the milk, add 1 cup boiling water, and let cool until lukewarm.
  2. 2 Combine lukewarm milk mixture, flour, salt, and dissolved yeast in a pan. Beat well.
  3. 3 In the morning, stir in molasses and enough Graham flour to knead. Let rise 3 hours.
  4. 4 Knead again, shape into loaves, and let rise in a warm place until light.
  5. 5 Bake in a moderate oven (350°F) for nearly 1 hour.
