Molasses Gingerbread With Lemon And Spice

Ingredients

  • 5 eggs
  • 8 oz brown sugar
  • 8 oz fresh butter
  • 1 cup sugarhouse molasses
  • 1 lb flour
  • 4 tbsp ginger
  • 2 large sticks cinnamon
  • 36 grains allspice
  • 36 cloves
  • juice and grated peel of 2 lemons

Method

  1. 1 Stir butter and sugar to a cream. Beat eggs well and pour molasses into the butter-sugar mixture.
  2. 2 Add ginger, cinnamon, allspice, and cloves. Stir well together.
  3. 3 Add eggs and flour alternately, stirring constantly. Stir the mixture vigorously until very light.
  4. 4 Stir in lemon juice and grated peel. Pour into a buttered earthen or metal pan.
  5. 5 Bake in a moderate oven (350°F) for 60 minutes or more, depending on thickness. Alternatively, bake in small cakes or tins.
