Molasses Gingerbread With Lemon And Spice
Ingredients
- 5 eggs
- 8 oz brown sugar
- 8 oz fresh butter
- 1 cup sugarhouse molasses
- 1 lb flour
- 4 tbsp ginger
- 2 large sticks cinnamon
- 36 grains allspice
- 36 cloves
- juice and grated peel of 2 lemons
Method
- 1 Stir butter and sugar to a cream. Beat eggs well and pour molasses into the butter-sugar mixture.
- 2 Add ginger, cinnamon, allspice, and cloves. Stir well together.
- 3 Add eggs and flour alternately, stirring constantly. Stir the mixture vigorously until very light.
- 4 Stir in lemon juice and grated peel. Pour into a buttered earthen or metal pan.
- 5 Bake in a moderate oven (350°F) for 60 minutes or more, depending on thickness. Alternatively, bake in small cakes or tins.
