Molasses Gingerbread With Candied Fruit

Ingredients

  • 2 lbs flour, well dried
  • 1 lb treacle (molasses)
  • 1 lb sugar
  • 1 nutmeg, grated
  • 4 oz sweetmeats (chopped candied fruit)
  • 1 oz ground ginger
  • 1 lb fresh butter, melted

Method

  1. 1 Melt the butter with the treacle and pour the hot mixture over the sugar, flour, ginger, nutmeg, and sweetmeats.
  2. 2 Mix thoroughly to form a stiff paste and let it cool completely until quite cold.
  3. 3 Roll out the dough on a floured surface to your desired thickness.
  4. 4 Cut into shapes and bake in a slow oven (300°F) until set and lightly browned.
