Molasses Ginger Peanut Muffins
Ingredients
- 1/2 cup brown sugar
- 1 cup molasses
- 1/2 cup water
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 6 tbsp shortening
- 1 egg
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1/2 cup finely chopped peanuts
Method
- 1 In a mixing bowl, combine brown sugar, molasses, water, baking soda, ginger, cinnamon, allspice, shortening, and egg. Beat thoroughly to mix.
- 2 Stir in flour and baking powder until just combined. Fold in chopped peanuts.
- 3 Fill well-greased and floured muffin pans slightly more than halfway full.
- 4 Bake in a moderate oven (350°F) for 20 minutes or until done.
