Molasses Ginger Peanut Muffins

Ingredients

  • 1/2 cup brown sugar
  • 1 cup molasses
  • 1/2 cup water
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 6 tbsp shortening
  • 1 egg
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup finely chopped peanuts

Method

  1. 1 In a mixing bowl, combine brown sugar, molasses, water, baking soda, ginger, cinnamon, allspice, shortening, and egg. Beat thoroughly to mix.
  2. 2 Stir in flour and baking powder until just combined. Fold in chopped peanuts.
  3. 3 Fill well-greased and floured muffin pans slightly more than halfway full.
  4. 4 Bake in a moderate oven (350°F) for 20 minutes or until done.
