Molasses Ginger Cupcakes With Raisins
Ingredients
- 3 cups flour
- 1 cup sugar
- 1 cup molasses
- 1 cup butter
- 1 tablespoon ginger
- 1 teaspoon saleratus
- 3 eggs
- 1 pound stoned and chopped raisins (optional)
Method
- 1 Cream the butter and sugar together until light and fluffy.
- 2 Beat in the eggs one at a time, then mix in the molasses.
- 3 Combine the flour, ginger, and saleratus, then add to the wet ingredients.
- 4 Fold in the chopped raisins if using.
- 5 Pour into cupcake pans and bake at 350°F for 15-20 minutes.
