Molasses Fruit Cake With Currants Raisins And Citron
Ingredients
- 1 pound flour
- 3/4 cup butter
- 1/2 cup sugar
- 2 cups currants
- 2 cups raisins
- 1/2 cup citron
- 1 1/2 cups molasses
- 1/4 cup brandy
- 1/4 cup wine
- 1/2 teaspoon saleratus
- 8 eggs
- Spices as desired
Method
- 1 Cream the butter and sugar together until light and fluffy.
- 2 Beat in the eggs one at a time, then stir in the molasses, brandy, and wine.
- 3 Mix in the flour and saleratus, then fold in the currants, raisins, and citron.
- 4 Pour the batter into a prepared pan and bake in a slow oven (300°F) for three hours.
