Molasses Blueberry Gingerbread

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 cup Porto Rico molasses
  • 1 cup thin sour cream or milk
  • 3 eggs, separated
  • 2 cups blueberries
  • 2 1/2 cups flour
  • 1 teaspoon baking soda

Method

  1. 1 Beat butter and sugar until creamy.
  2. 2 Mix in molasses, sour cream, and egg yolks.
  3. 3 Sift baking soda with flour and fold into wet ingredients.
  4. 4 Fold in blueberries.
  5. 5 Beat egg whites to soft peaks and fold into batter.
  6. 6 Bake as soft gingerbread and serve hot.
