Molasses Blueberry Gingerbread
Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1 cup Porto Rico molasses
- 1 cup thin sour cream or milk
- 3 eggs, separated
- 2 cups blueberries
- 2 1/2 cups flour
- 1 teaspoon baking soda
Method
- 1 Beat butter and sugar until creamy.
- 2 Mix in molasses, sour cream, and egg yolks.
- 3 Sift baking soda with flour and fold into wet ingredients.
- 4 Fold in blueberries.
- 5 Beat egg whites to soft peaks and fold into batter.
- 6 Bake as soft gingerbread and serve hot.
