Mixed Vegetable Curry With Tomatoes And Eggplant
Ingredients
- mixed vegetables (peas, beans, potatoes, carrots)
- leftover vegetables
- plenty of onions
- Crisco
- curry powder
- tomatoes
- eggplant
- peppers
Method
- 1 Fry the vegetables and plenty of onions together in a little Crisco.
- 2 Add as much curry powder as desired.
- 3 If tomatoes are not used, acidulate a combination of tomatoes, eggplant, and peppers.
