Mixed Vegetable Chow Chow Pickle
Ingredients
- 1 quart small white onions
- 1 quart small cucumbers
- 2 heads cauliflower
- 3 green peppers
- 1 quart vinegar
- 6 tablespoons mustard
- 3 tablespoons flour
- 1 cup sugar
- 1 tablespoon turmeric
- 1 cup salt
- 1 quart water
Method
- 1 Peel onions, slice cucumbers, separate cauliflower into flowerlets, and slice peppers.
- 2 Soak vegetables overnight in brine made of 1 cup salt and 1 quart water. Drain well.
- 3 Cook vegetables in fresh brine until tender, then drain again.
- 4 Boil vinegar. Mix mustard, flour, sugar, turmeric, and a little cold vinegar into a paste.
- 5 Stir the paste into the boiling vinegar until thickened. Add vegetables and cook slowly for 10 minutes.
- 6 Seal the hot mixture in sterilized jars.
