Mixed Vegetable Chow Chow Pickle

Ingredients

  • 1 quart small white onions
  • 1 quart small cucumbers
  • 2 heads cauliflower
  • 3 green peppers
  • 1 quart vinegar
  • 6 tablespoons mustard
  • 3 tablespoons flour
  • 1 cup sugar
  • 1 tablespoon turmeric
  • 1 cup salt
  • 1 quart water

Method

  1. 1 Peel onions, slice cucumbers, separate cauliflower into flowerlets, and slice peppers.
  2. 2 Soak vegetables overnight in brine made of 1 cup salt and 1 quart water. Drain well.
  3. 3 Cook vegetables in fresh brine until tender, then drain again.
  4. 4 Boil vinegar. Mix mustard, flour, sugar, turmeric, and a little cold vinegar into a paste.
  5. 5 Stir the paste into the boiling vinegar until thickened. Add vegetables and cook slowly for 10 minutes.
  6. 6 Seal the hot mixture in sterilized jars.
