Mixed Herb And Beet Salad
Ingredients
- Assorted fresh herbs (red sage, sorrel, parsley, spinach, burnet, lettuce, endive, chervil), finely chopped
- Capers
- Currants
- Olives
- Lemons, carved and sliced
- Boiled beet roots, carved and sliced
- Olive oil
- Vinegar
Method
- 1 Finely chop the herbs (red sage, sorrel, parsley, spinach, burnet, lettuce, endive, chervil) and wash them thoroughly.
- 2 Drain the herbs well by swinging them in a strainer or clean napkin to remove excess water.
- 3 Arrange the drained herbs in a clean serving dish.
- 4 Garnish the center with capers, currants, olives, carved lemon slices, and carved boiled beet slices.
- 5 Drizzle with olive oil and vinegar before serving.
