Mixed Herb And Beet Salad

Ingredients

  • Assorted fresh herbs (red sage, sorrel, parsley, spinach, burnet, lettuce, endive, chervil), finely chopped
  • Capers
  • Currants
  • Olives
  • Lemons, carved and sliced
  • Boiled beet roots, carved and sliced
  • Olive oil
  • Vinegar

Method

  1. 1 Finely chop the herbs (red sage, sorrel, parsley, spinach, burnet, lettuce, endive, chervil) and wash them thoroughly.
  2. 2 Drain the herbs well by swinging them in a strainer or clean napkin to remove excess water.
  3. 3 Arrange the drained herbs in a clean serving dish.
  4. 4 Garnish the center with capers, currants, olives, carved lemon slices, and carved boiled beet slices.
  5. 5 Drizzle with olive oil and vinegar before serving.
