Mixed Fruit Preserves

Ingredients

  • 6 lbs mixed fruit (peaches, apples, pears, quinces)
  • 1 pint water
  • 3 lbs sugar

Method

  1. 1 Peel and finely chop equal quantities of peaches, apples, pears, and quinces.
  2. 2 Place fruit in a kettle with 1 pint of water and boil until thoroughly cooked, ensuring it does not burn.
  3. 3 Remove fruit, mash well, and clean the kettle.
  4. 4 Return mashed fruit to the clean kettle with sugar equal to half the weight of the fruit.
  5. 5 Cook very slowly for two hours, stirring occasionally.
