Mixed Fruit Preserves
Ingredients
- 6 lbs mixed fruit (peaches, apples, pears, quinces)
- 1 pint water
- 3 lbs sugar
Method
- 1 Peel and finely chop equal quantities of peaches, apples, pears, and quinces.
- 2 Place fruit in a kettle with 1 pint of water and boil until thoroughly cooked, ensuring it does not burn.
- 3 Remove fruit, mash well, and clean the kettle.
- 4 Return mashed fruit to the clean kettle with sugar equal to half the weight of the fruit.
- 5 Cook very slowly for two hours, stirring occasionally.
