Minted Peas With Lemon Parsley Butter
Ingredients
- 1 quart shelled peas
- 4 tablespoons Crisco
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 2 sprigs mint
- 1 tablespoon chopped parsley
- 1 teaspoon sugar
Method
- 1 Shell peas and add to plenty of boiling water with a teaspoon of salt, sugar, and mint.
- 2 Boil quickly until tender, then drain the peas thoroughly.
- 3 Mix lemon juice with Crisco and chopped parsley.
- 4 Stir the mixture into the peas, reheat gently, and serve immediately.
