Minted Peas With Lemon Parsley Butter

Ingredients

  • 1 quart shelled peas
  • 4 tablespoons Crisco
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 sprigs mint
  • 1 tablespoon chopped parsley
  • 1 teaspoon sugar

Method

  1. 1 Shell peas and add to plenty of boiling water with a teaspoon of salt, sugar, and mint.
  2. 2 Boil quickly until tender, then drain the peas thoroughly.
  3. 3 Mix lemon juice with Crisco and chopped parsley.
  4. 4 Stir the mixture into the peas, reheat gently, and serve immediately.
