Mint Boiled Potato Balls With Lemon Parsley
Ingredients
- 3 tablespoons Crisco
- 2 lbs new potatoes
- 2 sprigs mint
- 1 teaspoon salt
- 1 tablespoon chopped parsley
- 1 tablespoon lemon juice
Method
- 1 Wash and scrape potatoes. Use a round vegetable cutter to scoop out small balls from the potatoes.
- 2 Boil the potato balls in water with salt and mint until tender. Drain well.
- 3 Add Crisco, chopped parsley, and lemon juice to the drained potatoes. Toss gently in the pan for a few minutes.
- 4 Serve immediately on a hot dish.
