Mint Boiled Potato Balls With Lemon Parsley

Ingredients

  • 3 tablespoons Crisco
  • 2 lbs new potatoes
  • 2 sprigs mint
  • 1 teaspoon salt
  • 1 tablespoon chopped parsley
  • 1 tablespoon lemon juice

Method

  1. 1 Wash and scrape potatoes. Use a round vegetable cutter to scoop out small balls from the potatoes.
  2. 2 Boil the potato balls in water with salt and mint until tender. Drain well.
  3. 3 Add Crisco, chopped parsley, and lemon juice to the drained potatoes. Toss gently in the pan for a few minutes.
  4. 4 Serve immediately on a hot dish.
