Mincemeat Stuffed Pancakes

Ingredients

  • 4 oz fine wheatmeal
  • 1/2 pint milk
  • 3 eggs
  • butter for frying
  • mincemeat
  • sifted sugar for serving

Method

  1. 1 Whisk wheatmeal, milk, and eggs together to form a smooth batter.
  2. 2 Heat butter in a skillet and fry small pancakes until golden on both sides.
  3. 3 Place a spoonful of mincemeat on each pancake, fold them up, and serve with sifted sugar.
