Minced Lamb and Poached Egg Toast

  • cold roast lamb
  • salt
  • pepper
  • mint
  • gravy or water
  • butter
  • cream sauce (optional)
  • dry toast slices
  • butter for toast
  • poached eggs
  • minced parsley

Method

  1. 1 Chop cold roast lamb very fine and season with salt, pepper, and a bit of mint.
  2. 2 Reheat the lamb in gravy, water with butter, or a cream sauce until warm.
  3. 3 Spread the lamb thinly on dry buttered toast slices.
  4. 4 Top each slice with a poached egg and sprinkle with pepper and minced parsley.
