Minced Lamb and Poached Egg Toast
Ingredients
- cold roast lamb
- salt
- pepper
- mint
- gravy or water
- butter
- cream sauce (optional)
- dry toast slices
- butter for toast
- poached eggs
- minced parsley
Method
- 1 Chop cold roast lamb very fine and season with salt, pepper, and a bit of mint.
- 2 Reheat the lamb in gravy, water with butter, or a cream sauce until warm.
- 3 Spread the lamb thinly on dry buttered toast slices.
- 4 Top each slice with a poached egg and sprinkle with pepper and minced parsley.
