Milk Soaked Bread Muffins
Ingredients
- 2 cups bread crumbs
- 1/3 cup flour
- 1 tablespoon melted fat
- 1 1/2 cups milk
- 1 egg
- 2 teaspoons baking powder
- 1/8 teaspoon salt
Method
- 1 Cover bread crumbs with milk and soak for 10 minutes.
- 2 Beat the mixture smooth, then add egg yolks, sifted dry ingredients, and melted fat.
- 3 Fold in beaten egg whites.
- 4 Bake in muffin tins in a moderate oven (350°F) for 15 minutes.
