Milk Brushed Yeast Rolls
Ingredients
- 1 lb fine flour
- 2 oz butter
- 1 tbsp yeast
- 1/2 pt warm milk (for sponge)
- 1-2 eggs
- 1/2 tbsp fine sugar
- 1/2 pt warm milk (for dough)
- 1 tsp salt
- milk for brushing
Method
- 1 Rub butter into flour. Mix yeast with 1/2 pt warm milk and set aside to form a light sponge.
- 2 Beat eggs with sugar, then mix into the sponge along with the remaining 1/2 pt warm milk and salt.
- 3 Combine mixture with flour to form a light dough. Let rise in a warm place for 1 hour.
- 4 Divide dough, roll into finger-thick rolls, and place on baking sheets. Let rise for 1 hour.
- 5 Brush rolls with milk and bake in a slow oven (300°F) until done.
