Milk Brushed Yeast Rolls

Ingredients

  • 1 lb fine flour
  • 2 oz butter
  • 1 tbsp yeast
  • 1/2 pt warm milk (for sponge)
  • 1-2 eggs
  • 1/2 tbsp fine sugar
  • 1/2 pt warm milk (for dough)
  • 1 tsp salt
  • milk for brushing

Method

  1. 1 Rub butter into flour. Mix yeast with 1/2 pt warm milk and set aside to form a light sponge.
  2. 2 Beat eggs with sugar, then mix into the sponge along with the remaining 1/2 pt warm milk and salt.
  3. 3 Combine mixture with flour to form a light dough. Let rise in a warm place for 1 hour.
  4. 4 Divide dough, roll into finger-thick rolls, and place on baking sheets. Let rise for 1 hour.
  5. 5 Brush rolls with milk and bake in a slow oven (300°F) until done.
