Milk Brushed Yeast Buns
Ingredients
- 4 lbs sifted flour
- 1 lb good moist sugar
- ½ cup good yeast
- 1 pint lukewarm milk
- 1 lb butter, melted
- additional warm milk as needed
- extra flour for dusting
- butter for greasing pan
- milk for brushing
Method
- 1 In a large bowl, combine 4 lbs sifted flour and 1 lb sugar. Make a well in the center.
- 2 Stir in ½ cup yeast, 1 pint lukewarm milk, and enough flour to make a batter the thickness of cream. Cover and let rise for 2 hours.
- 3 Melt 1 lb butter (do not heat). Stir into the batter along with enough warm milk to form a soft paste. Dust with flour, cover, and let rest for 1 hour.
- 4 Grease a baking sheet with butter. Shape dough into egg-sized buns and place on the sheet, 3 inches apart. Let rise in a warm place until doubled in size, about 30 minutes.
- 5 Bake in a hot oven (425°F) until golden brown. Remove and brush tops with milk while warm.
