Milk-Based Curried Oysters On Toast

Ingredients

  • 1 pint oysters (with juice)
  • 1 tablespoon butter
  • 1 tablespoon chopped onion
  • 1 tablespoon curry powder
  • 2 tablespoons all-purpose flour
  • 1 pint sweet milk
  • Toast slices, buttered and hot

Method

  1. 1 Strain the oyster juice. Cook the juice in a saucepan until the edges of the oysters curl.
  2. 2 In a separate pan, cook the chopped onion in butter for 5 minutes until softened.
  3. 3 Whisk the curry powder and flour into the butter mixture. Gradually stir in the milk, cooking until thickened.
  4. 4 Add the cooked oysters to the sauce. Pour over hot buttered toast and serve immediately.
