Milk-Based Curried Oysters On Toast
Ingredients
- 1 pint oysters (with juice)
- 1 tablespoon butter
- 1 tablespoon chopped onion
- 1 tablespoon curry powder
- 2 tablespoons all-purpose flour
- 1 pint sweet milk
- Toast slices, buttered and hot
Method
- 1 Strain the oyster juice. Cook the juice in a saucepan until the edges of the oysters curl.
- 2 In a separate pan, cook the chopped onion in butter for 5 minutes until softened.
- 3 Whisk the curry powder and flour into the butter mixture. Gradually stir in the milk, cooking until thickened.
- 4 Add the cooked oysters to the sauce. Pour over hot buttered toast and serve immediately.
