Milk-Based Creamed Oysters On Toast

Ingredients

  • 1 quart milk
  • 2 tablespoons flour
  • 3 tablespoons butter
  • salt and pepper to taste
  • 1 pint oysters

Method

  1. 1 In a double boiler, combine milk, butter, and flour. Stir in a little cold milk to smooth the mixture, then add to the hot milk.
  2. 2 Cook the sauce, stirring constantly, until thickened.
  3. 3 Simmer oysters in their liquor for five minutes, then skim them out.
  4. 4 Add the oysters to the cream sauce and season with salt and pepper.
  5. 5 Pour the creamed oysters over thin slices of crisp toast on a heated platter and serve immediately.
