Milk-Based Creamed Oysters On Toast
Ingredients
- 1 quart milk
- 2 tablespoons flour
- 3 tablespoons butter
- salt and pepper to taste
- 1 pint oysters
Method
- 1 In a double boiler, combine milk, butter, and flour. Stir in a little cold milk to smooth the mixture, then add to the hot milk.
- 2 Cook the sauce, stirring constantly, until thickened.
- 3 Simmer oysters in their liquor for five minutes, then skim them out.
- 4 Add the oysters to the cream sauce and season with salt and pepper.
- 5 Pour the creamed oysters over thin slices of crisp toast on a heated platter and serve immediately.
