Milk And Water Sponge Cake

Ingredients

  • 1/2 cup sugar
  • 4 tbsp shortening
  • 1 egg
  • 1 1/2 cups milk and water (equal parts)
  • 3 cups flour
  • 5 tsp baking powder
  • 1/2 cup finely chopped citron or seeded raisins (optional)

Method

  1. 1 Cream 1/2 cup sugar and 4 tbsp shortening until light in a bowl.
  2. 2 Add 1 egg, then mix in 1 1/2 cups equal parts milk and water.
  3. 3 Stir in 3 cups flour and 5 tsp baking powder to form a smooth batter.
  4. 4 Pour batter into well-greased deep layer-cake pans.
  5. 5 Bake in a moderate oven (350°F) for 25 minutes.
  6. 6 Near the end, brush tops with milk and sprinkle with granulated sugar.
