Milk And Egg Cornmeal Muffins
Ingredients
- ¾ cup corn meal
- 1¼ cups flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons sugar
- 1 cup milk
- 2 tablespoons shortening
- 1 egg
Method
- 1 Sift together corn meal, flour, baking powder, salt, and sugar.
- 2 Add milk, melted shortening, and well-beaten egg; mix well.
- 3 Half fill greased muffin tins with batter.
- 4 Bake about 35 minutes in a hot oven (425°F).
