  • 1 whole wheat pita bread
  • 2 tablespoons low sodium tomato sauce
  • 2 slices part-skim mozzarella cheese
  • 1/16 cup sliced green or red bell peppers
  • 1 tablespoon sliced mushrooms
  • 1 tablespoon chopped broccoli
  • 1 tablespoon chopped red onion
  • 1 tablespoon shredded spinach

Method

  1. 1 Place one pita round on a plate and spread 2 tablespoons of tomato sauce evenly over the surface.
  2. 2 Sprinkle your chosen chopped vegetables over the sauce, then layer two slices of mozzarella cheese on top.
  3. 3 Cover with the other half of the pita round to form a pocket.
  4. 4 Microwave for 35 to 45 seconds, or until the cheese is melted.
