Microwave Veggie Pita Pizza
Ingredients
- 1 whole wheat pita bread
- 2 tablespoons low sodium tomato sauce
- 2 slices part-skim mozzarella cheese
- 1/16 cup sliced green or red bell peppers
- 1 tablespoon sliced mushrooms
- 1 tablespoon chopped broccoli
- 1 tablespoon chopped red onion
- 1 tablespoon shredded spinach
Method
- 1 Place one pita round on a plate and spread 2 tablespoons of tomato sauce evenly over the surface.
- 2 Sprinkle your chosen chopped vegetables over the sauce, then layer two slices of mozzarella cheese on top.
- 3 Cover with the other half of the pita round to form a pocket.
- 4 Microwave for 35 to 45 seconds, or until the cheese is melted.
- 5 Slice in half, let cool slightly, and enjoy.
