Microwave Rice Pudding With Raisins
Ingredients
- 2/3 cup white rice, uncooked
- 2 cups water, warm
- 1 teaspoon butter or margarine
- 1/2 cup dry milk, non-fat
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup water
- 1/2 cup raisins (or other dried fruit)
Method
- 1 Combine rice, 2 cups warm water, and butter in a large microwave-safe dish. Cover loosely and cook on high for 5 minutes or until boiling.
- 2 Reduce microwave to defrost (50% power) and cook for 10 minutes. Meanwhile, mix dry milk, sugar, vanilla, cinnamon, 1 cup water, and raisins.
- 3 Remove cover from rice and quickly stir in the milk mixture. Cover loosely and cook on defrost (50% power) for 10 minutes.
- 4 Let the pudding sit, covered, for 10 minutes. Stir gently and serve warm or refrigerate for up to 2 days.
