Microwave Raisin Bread Pudding
Ingredients
- 5 slices white or wheat bread
- 2 tablespoons margarine or butter
- 1/4 teaspoon cinnamon
- 1/3 cup white or brown sugar
- 1/2 cup raisins
- 1 large egg (or 1 egg plus 2 egg whites)
- 1 1/2 cups non-fat milk
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Method
- 1 Spread one side of bread slices with margarine or butter and sprinkle with cinnamon.
- 2 Cut the bread into 1-inch cubes.
- 3 In a lightly sprayed casserole dish, combine the bread cubes, sugar, and raisins.
- 4 In a bowl, blend the egg, milk, salt, and vanilla, then pour over the bread mixture and lightly blend.
- 5 Cover and microwave on high for 5 minutes, turn dish, then microwave 3-5 minutes longer until edges are firm and center is almost set.
- 6 Let sit covered for 10 minutes before serving warm or cold.
