Microwave Layered Potato Casserole
Ingredients
- 1 cup Yukon Gold potatoes, very thinly sliced
- 1 cup onion, quartered and thinly sliced
- 1/2 cup shredded reduced-fat sharp cheddar cheese
- 1/2 teaspoon Italian herb seasoning
- 1 1/2 cups stock or reduced-sodium broth
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon garlic salt
- Nonstick cooking spray
Method
- 1 Spray an 8-inch microwave-safe baking dish with nonstick cooking spray.
- 2 Layer 1/3 of potatoes, 1/2 of onions, 1/3 of cheese, and 1/2 of herbs in the dish. Repeat layers, ensuring a solid potato layer without gaps, then top with remaining cheese.
- 3 Stir together stock, Dijon mustard, and garlic salt, then pour over the potatoes.
- 4 Cover with plastic wrap and microwave on HIGH for about 20 minutes, or until internal temperature reaches 165°F.
- 5 Carefully remove cover due to steam, then serve.
