Microwave Layered Potato Casserole

Ingredients

  • 1 cup Yukon Gold potatoes, very thinly sliced
  • 1 cup onion, quartered and thinly sliced
  • 1/2 cup shredded reduced-fat sharp cheddar cheese
  • 1/2 teaspoon Italian herb seasoning
  • 1 1/2 cups stock or reduced-sodium broth
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon garlic salt
  • Nonstick cooking spray

Method

  1. 1 Spray an 8-inch microwave-safe baking dish with nonstick cooking spray.
  2. 2 Layer 1/3 of potatoes, 1/2 of onions, 1/3 of cheese, and 1/2 of herbs in the dish. Repeat layers, ensuring a solid potato layer without gaps, then top with remaining cheese.
  3. 3 Stir together stock, Dijon mustard, and garlic salt, then pour over the potatoes.
  4. 4 Cover with plastic wrap and microwave on HIGH for about 20 minutes, or until internal temperature reaches 165°F.
  5. 5 Carefully remove cover due to steam, then serve.
