Microwave Cauliflower Peas Cream Sauce
Ingredients
- 2 cups cauliflower, cut into florets
- 1 cup peas (fresh or frozen)
- 2 tablespoons water
- 1/4 cup onion, chopped
- 1 1/2 teaspoons butter or margarine
- 1 tablespoon all-purpose flour
- 1/2 cup milk (skim)
- 1 tablespoon pimiento, chopped (optional)
- 1/2 teaspoon parsley flakes
- 1/8 teaspoon instant chicken bouillon granules
- 1 dash salt
- 1 dash ground black pepper
Method
- 1 Combine cauliflower, peas, and water in a 1-quart casserole. Cover and microwave on High for 6 to 8 minutes, stirring halfway through, until fork-tender. Let stand covered.
- 2 In a 2-cup measure, microwave onion and butter on High for 1 to 1.5 minutes until tender. Stir in flour and microwave briefly until bubbling.
- 3 Add milk, pimiento, parsley, bouillon, salt, and pepper. Microwave on High for 1.5 to 2 minutes, stirring every minute, until thickened.
- 4 Drain the vegetables and pour the sauce over them, stirring to coat evenly. Serve immediately.
