Microwave Cauliflower Peas Cream Sauce

Ingredients

  • 2 cups cauliflower, cut into florets
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons water
  • 1/4 cup onion, chopped
  • 1 1/2 teaspoons butter or margarine
  • 1 tablespoon all-purpose flour
  • 1/2 cup milk (skim)
  • 1 tablespoon pimiento, chopped (optional)
  • 1/2 teaspoon parsley flakes
  • 1/8 teaspoon instant chicken bouillon granules
  • 1 dash salt
  • 1 dash ground black pepper

Method

  1. 1 Combine cauliflower, peas, and water in a 1-quart casserole. Cover and microwave on High for 6 to 8 minutes, stirring halfway through, until fork-tender. Let stand covered.
  2. 2 In a 2-cup measure, microwave onion and butter on High for 1 to 1.5 minutes until tender. Stir in flour and microwave briefly until bubbling.
  3. 3 Add milk, pimiento, parsley, bouillon, salt, and pepper. Microwave on High for 1.5 to 2 minutes, stirring every minute, until thickened.
  4. 4 Drain the vegetables and pour the sauce over them, stirring to coat evenly. Serve immediately.
