Mexican Red Beans With Tomatoes
Ingredients
- 1 cup Bayo or Mexican red beans
- 3 fresh tomatoes, skinned and diced
- 1/2 onion, finely chopped
- 1 tablespoon butter
- Salt and pepper to taste
Method
- 1 Soak beans overnight, then drain.
- 2 Place beans in a saucepan with plenty of fresh water and cook for two hours.
- 3 Drain the beans and return them to the saucepan.
- 4 Add the diced tomatoes, chopped onion, and enough boiling water to cover.
- 5 Cook for one hour until tender.
- 6 Stir in butter, salt, and pepper to taste before serving.
