Mexican Red Beans With Tomatoes

Ingredients

  • 1 cup Bayo or Mexican red beans
  • 3 fresh tomatoes, skinned and diced
  • 1/2 onion, finely chopped
  • 1 tablespoon butter
  • Salt and pepper to taste

Method

  1. 1 Soak beans overnight, then drain.
  2. 2 Place beans in a saucepan with plenty of fresh water and cook for two hours.
  3. 3 Drain the beans and return them to the saucepan.
  4. 4 Add the diced tomatoes, chopped onion, and enough boiling water to cover.
  5. 5 Cook for one hour until tender.
  6. 6 Stir in butter, salt, and pepper to taste before serving.
