Meat Stock Split Pea Soup With Fried Onion
Ingredients
- 1 cup split peas
- 3 cups water
- meat stock (made from bones and cold meat or fresh meat)
- 1 onion, fried
- minced mint leaves
- toast squares, fried crisp
Method
- 1 Soak split peas overnight in 3 cups of water.
- 2 Boil peas until soft, then mash them smoothly.
- 3 Dilute the mashed peas with meat stock.
- 4 Fry an onion and add it to the soup.
- 5 Serve with minced mint leaves and crisp fried toast squares.
