Meat Stock Split Pea Soup With Fried Onion

Ingredients

  • 1 cup split peas
  • 3 cups water
  • meat stock (made from bones and cold meat or fresh meat)
  • 1 onion, fried
  • minced mint leaves
  • toast squares, fried crisp

Method

  1. 1 Soak split peas overnight in 3 cups of water.
  2. 2 Boil peas until soft, then mash them smoothly.
  3. 3 Dilute the mashed peas with meat stock.
  4. 4 Fry an onion and add it to the soup.
  5. 5 Serve with minced mint leaves and crisp fried toast squares.
