Meat And Cottage Cheese Cappelletti Soup
Ingredients
- 1 cup flour
- 1 egg
- Salt
- Water (optional)
- Cooked chicken, pork, or veal, ground fine
- Cottage cheese or curds, equal amount to meat
- Grated cheese
- Grated lemon peel
- Nutmeg
- Allspice
- Chicken or beef broth
Method
- 1 Make dough: Mix 1 cup flour, 1 egg, and salt on a board. Knead thoroughly, adding water if needed, until smooth. Roll out very thin.
- 2 Prepare filling: Mix equal parts ground cooked meat (chicken, pork, or veal) and cottage cheese. Season with grated cheese, lemon peel, nutmeg, allspice, and salt.
- 3 Form cappelletti: Cut 3-inch circles from dough. Place a spoonful of filling in the center. Fold over and seal edges with water.
- 4 Cook soup: Boil cappelletti in chicken or beef broth until pasta is tender. Serve hot with the broth.
