Mayonnaise Potato Salad With Peas

Ingredients

  • 10 large potatoes
  • ¼ lb sweet butter
  • 4 tbsp grated onion
  • 2 tsp salt
  • dash of cayenne
  • 2 drops Tabasco sauce
  • 2 hard-boiled eggs, yolks only
  • 2 raw egg yolks
  • vinegar
  • 1 can drained peas
  • lettuce leaves
  • chopped red beets or chopped celery

Method

  1. 1 Boil potatoes in jackets until tender. Peel and cool.
  2. 2 Dice 8 potatoes. Mash the remaining 2 while hot.
  3. 3 Mix mashed potatoes with butter, onion, salt, cayenne, and Tabasco. Press through a sieve.
  4. 4 Rub hard-boiled yolks into a paste. Mix with raw yolks and the potato mixture until smooth.
  5. 5 Thin the dressing with vinegar to mayonnaise consistency.
  6. 6 Gently fold in diced potatoes and drained peas. Serve on lettuce with beet or celery garnish.
