Mayonnaise Potato Salad With Peas
Ingredients
- 10 large potatoes
- ¼ lb sweet butter
- 4 tbsp grated onion
- 2 tsp salt
- dash of cayenne
- 2 drops Tabasco sauce
- 2 hard-boiled eggs, yolks only
- 2 raw egg yolks
- vinegar
- 1 can drained peas
- lettuce leaves
- chopped red beets or chopped celery
Method
- 1 Boil potatoes in jackets until tender. Peel and cool.
- 2 Dice 8 potatoes. Mash the remaining 2 while hot.
- 3 Mix mashed potatoes with butter, onion, salt, cayenne, and Tabasco. Press through a sieve.
- 4 Rub hard-boiled yolks into a paste. Mix with raw yolks and the potato mixture until smooth.
- 5 Thin the dressing with vinegar to mayonnaise consistency.
- 6 Gently fold in diced potatoes and drained peas. Serve on lettuce with beet or celery garnish.
