Mayonnaise Chicken Salad With Celery And Capers
Ingredients
- 1 whole cold chicken
- 1 tsp white pepper
- 1/2 head celery
- 1 grain cayenne
- 2 egg yolks
- 1 tbsp vinegar
- 1 tbsp capers
- 1 head lettuce
- 1/2 cup salad oil
- 1 tbsp cream
- 1 egg white, beaten to stiff peaks
Method
- 1 Cut the cold chicken into small square pieces and remove the skin.
- 2 Wash and cut the celery into pieces similar in size to the chicken.
- 3 In a bowl, beat egg yolks while slowly dropping in the salad oil until the mixture resembles thick cream.
- 4 Stir in the vinegar, then add the chicken, celery, white pepper, salt, and cayenne; mix thoroughly.
- 5 Line a salad bowl with lettuce, fill with the chicken mixture, sprinkle with capers, and garnish with celery tips.
