Mayonnaise-Based Vinegar Coleslaw

Ingredients

  • 1 head cabbage, shredded fine
  • 1 green pepper, chopped
  • 1 egg yolk
  • 1 tsp mustard
  • ½ tsp paprika
  • 1 tsp sugar
  • 1 tsp vinegar
  • ¾ cup salad oil
  • Salt to taste

Method

  1. 1 Shred cabbage and chop green pepper. Place in water to crisp, then drain, wrap in a cloth, and let dry thoroughly.
  2. 2 In a bowl, whisk egg yolk, mustard, paprika, sugar, and 1 tsp vinegar into a smooth paste.
  3. 3 Slowly drizzle in oil while beating hard until emulsified. Add salt to taste and more vinegar if needed for consistency.
  4. 4 Toss the dried cabbage and pepper with the dressing until well coated. Serve immediately.
