Mayonnaise-Based Vinegar Coleslaw
Ingredients
- 1 head cabbage, shredded fine
- 1 green pepper, chopped
- 1 egg yolk
- 1 tsp mustard
- ½ tsp paprika
- 1 tsp sugar
- 1 tsp vinegar
- ¾ cup salad oil
- Salt to taste
Method
- 1 Shred cabbage and chop green pepper. Place in water to crisp, then drain, wrap in a cloth, and let dry thoroughly.
- 2 In a bowl, whisk egg yolk, mustard, paprika, sugar, and 1 tsp vinegar into a smooth paste.
- 3 Slowly drizzle in oil while beating hard until emulsified. Add salt to taste and more vinegar if needed for consistency.
- 4 Toss the dried cabbage and pepper with the dressing until well coated. Serve immediately.
