Massachusetts Pumpkin Pie
Ingredients
- 1 small pumpkin (about 4 lbs)
- 3 eggs
- 3 tbsp molasses
- 2 tbsp ground cinnamon
- 1 tsp ground ginger
- 2 tsp salt
- 2 quarts hot milk
- sugar (optional, for sweetening)
- pie crust (for bottom only)
Method
- 1 Pare the pumpkin, remove seeds, and steam until soft. Strain through a colander to create a smooth puree.
- 2 Beat in eggs, molasses, cinnamon, ginger, salt, and hot milk. Add sugar if desired sweetness is not reached.
- 3 Pour into pie crusts lined with only a bottom crust. Bake in a moderate oven (350°F) until set.
