Massachusetts Pumpkin Pie

Ingredients

  • 1 small pumpkin (about 4 lbs)
  • 3 eggs
  • 3 tbsp molasses
  • 2 tbsp ground cinnamon
  • 1 tsp ground ginger
  • 2 tsp salt
  • 2 quarts hot milk
  • sugar (optional, for sweetening)
  • pie crust (for bottom only)

Method

  1. 1 Pare the pumpkin, remove seeds, and steam until soft. Strain through a colander to create a smooth puree.
  2. 2 Beat in eggs, molasses, cinnamon, ginger, salt, and hot milk. Add sugar if desired sweetness is not reached.
  3. 3 Pour into pie crusts lined with only a bottom crust. Bake in a moderate oven (350°F) until set.
