Mashed Root Vegetable Soup
Ingredients
- 2 carrots, finely chopped
- 1 turnip, finely chopped
- 3 celery stalks, finely chopped
- ½ onion, finely chopped
- 4 tablespoons butter
- 1 cup potatoes, chopped
- 1 quart boiling water
- 1 tablespoon butter
- Fresh parsley, chopped
- Salt and pepper to taste
Method
- 1 Finely chop the carrots, turnip, celery, and onion. Melt 4 tablespoons of butter in a large pot over medium heat.
- 2 Add the chopped vegetables to the butter and cook for 10 minutes, stirring constantly to soften.
- 3 Add the chopped potatoes, cover the pot, and cook for 5 minutes.
- 4 Pour in the boiling water, bring to a boil, then reduce heat and simmer for 1 hour until vegetables are tender.
- 5 Mash the vegetables directly in the pot. Stir in the remaining tablespoon of butter and chopped parsley. Season with salt and pepper before serving.
