Mashed Root Vegetable Soup

Ingredients

  • 2 carrots, finely chopped
  • 1 turnip, finely chopped
  • 3 celery stalks, finely chopped
  • ½ onion, finely chopped
  • 4 tablespoons butter
  • 1 cup potatoes, chopped
  • 1 quart boiling water
  • 1 tablespoon butter
  • Fresh parsley, chopped
  • Salt and pepper to taste

Method

  1. 1 Finely chop the carrots, turnip, celery, and onion. Melt 4 tablespoons of butter in a large pot over medium heat.
  2. 2 Add the chopped vegetables to the butter and cook for 10 minutes, stirring constantly to soften.
  3. 3 Add the chopped potatoes, cover the pot, and cook for 5 minutes.
  4. 4 Pour in the boiling water, bring to a boil, then reduce heat and simmer for 1 hour until vegetables are tender.
  5. 5 Mash the vegetables directly in the pot. Stir in the remaining tablespoon of butter and chopped parsley. Season with salt and pepper before serving.
